Potatoes Two Ways

Potatoes are everyone’s favorite even though they’re full of calories. Many of us have too many conflicting opinions about them don’t we? Well for the goodness and when consumed in appropriate quantities potatoes are a god send. They’re a good source of Vitamin B6, potassium,copper, vitamin C, manganese, phosphorus, niacin, dietary fiber and pantothenic acid; they even lower our blood pressure and they also express activities against free radicals in the body. Potatoes baked with mild amazing flavoring is extremely nutritious. Always remember two things 1. Never count calories when you’re eating a plant-based diet. 2. Never consume anything too much, because too much of any fruit or vegetable can be unhealthy, they’re all nutritious and full of health when consumed in appropriate quantities. I like baking my potatoes rather than frying them to perfection. Baking is always healthy and nutritious than frying any day.

Garlicky Potato Wedges

Ingredients:

  1. 3 cloves of garlic (crushed) if you like ginger crush a small knob with garlic, it’s upto you to choose which flavour you would like to dominate. Some like ginger and some like garlic. I like garlic to dominate and I hate ginger so crushing it along with garlic was a complete no for me.
  2. 2 tbps olive oil
  3. juice of half lemon
  4. 2 heaped tsp of rosemary, thyme and basil
  5. Oregano and paprika
  6. Salt to taste
  7. cheese : Completely optional, I dint add and wouldn’t recommend it if you’re eating healthy

Method:

  1.  Wash the potato in hot water and cut them into small slices.
  2. Mix the above ingredients and keep.
  3. Add the mixed ingredients to the potato wedges and let it rest till the oven is  preheated.
  4. The oven should be preheated for 10 mins at 180 degree celsius
  5. After preheating keep the potatoes in the oven and bake for 20 mins at 180-200 degree celsius.
  6. Take it out, let it to cool and relish it.

Baked Baby Potatoes

Ingredients:

  1. 7 Baby potatoes halved
  2. 3 tbps olive oil
  3. 1 tsp sumac spice
  4. 2 tsp zatar spice
  5. lemon juice
  6. Salt to taste
  7. 2 tsp paprika
  8. dried rosemary
  9. Salt to taste

Method:

  1. Wash the baby potato with hot water and cut them into halves
  2. Mix all the ingredients and keep them ready
  3. Add it to the potatoes and mix. Wait till the oven is preheated. (same time and temperature as above)
  4. After preheating keep the potatoes in the oven and bake them at 180 degree celsius for 20 min
  5. They’re ready to eat after baking.

P.S: If you don’t have any of the spices above add whatever you have. You can use cajun spice, five spice, italian seasoning anything. I’ve found these are very subtle and can be used along with any cuisine as a side.
